Late to get online today; they tasked me! The roommates that is... We're having a Mardi Gras party this weekend, and they wanted real cajun gumbo. They promised everyone to have it, and then passed the job to me. :) I don't usually cook. They didn't think I could make the roux necessary, much less the rest. Perfect brick roux is done now, and most of the rest of the ingredients are prepped. It'll simmer all night tonight (and probably make them all crazy with the smell). So now I get online late, and have to catch up on all the clicking!!! Off to ninja!

Back up now. The roux contains chicken, sausage, andouille, tasso and crayfish. :) Everything is now ready, and just waiting the alchemy that time and heat bring.

lol I just had a image of you actually putting all the the meats/crawfish in the actual roux, oh that would be bad. Once you add the broth we usually stop calling it a roux. Dang, I am now craving and may make some gumbo tonight. :D
